How one company feeds thousands at the Greenbrier Classic

WHITE SULPHUR SPRINGS (WVVA) A big Classic crowd means there are a lot of mouths to feed. Prom Management Catering works hard to have that covered.

"We actually arrive a week before the event starts and we're here all week. We're here probably about ten hours a day. We're all about quality, we want to produce a quality product whether it's a soda or a hot item," says Korey Maw of Prom Management.

Those hot items range from ham and brie sandwiches to the classic burger. Prom does their best to give tournament visitors a taste of the Greenbrier food experience.

"We basically try to mimic what the Greenbrier does and replicate it here for the guests that are going to be out on the course," says Rebecca Warner, Executive Sous Chef. 

Food items change every year, but one Classic item never does. The fan favorite fried green tomato sandwich.

"You get crisp, tangy green tomato taste, and I get one every year. It's kind of a tradition type thing, we live in southern West Virginia. It kind of rolls together," says Mike Grimmett, a Greenbrier Classic visitor. 

It's a big task but Prom Management says 6 years of working the Classic means they never bite off more than they can chew.
